Overview
Fishbone idea is born from the desire of showcasing the very best of the countries or region that any of their locations has to offer. More often than not, culinary concepts are “transported” to whatever location is chosen and rely almost exclusively on imported ingredients ignoring, for the most part, the local culture and traditions. While obviously this is not possible for every element of menus, Fishbone is setting out to utilize the very best each local season has to offer, in support of the local fishermen, gardeners, artisans and that of the spices & food merchants that strive to preserve culture and traditions.
